The Banana Cake Rum Punch is built for a crowd. It's big on flavour, easy to batch, and the kind of drink that empties the jug faster than you refilled it. Rich, tropical, and unapologetically indulgent — like a banana cake decided to go to a party.
The Single Serve
Serves 1
- 50ml State of Rum Banana Cake Rum
- 25ml fresh lime juice
- 20ml pineapple juice
- 15ml coconut cream
- 10ml simple syrup
- Ice
- To garnish: dried banana chip, lime wheel, sprig of mint
Method:Add all ingredients to a shaker with ice. Shake well for 10 seconds. Strain over fresh ice in a rocks glass or tiki mug. Garnish generously.
The Batch (serves 8–10)
This is the one for garden parties, barbecues, and any occasion where individual shaking is a fantasy.
- 500ml State of Rum Banana Cake Rum
- 200ml fresh lime juice
- 300ml pineapple juice
- 150ml coconut cream
- 100ml simple syrup
- 200ml soda water (add at serving)
Method:Combine everything except the soda water in a large jug or punch bowl. Refrigerate for up to 4 hours. When ready to serve, add soda water and a large block of ice. Garnish the bowl with lime wheels, banana chips, and mint.
Make it the night before: mix everything except soda and ice. It gets better as the flavours meld.
Why Banana Cake Rum Is Different

- 50ml Banana Cake Rum
- 25ml fresh lime juice

Shake hard, double-strain into a chilled coupe. No garnish needed — the colour speaks for itself.
